Pad See Ew, you say?!

Have you ever had the pleasure of eating this tasty Thai dish before?  If you have been on a strictly gluten-free diet for a while, chances are you have not had the chance to experience this delightful dinner recipe.

Here in Austin, TX we are fortunate enough to have many restaurants that cater to gluten-free and other allergen-free diets.  One restaurant holds a special place in my heart…. Thai Fresh.  A large portion of their menu is gluten-free (including their pad see ew!), allowing us gluten free-ers to enjoy delightful Thai cuisine along with our dinner mates.

If you ever happen to visit Austin and want a quick bite to eat, check them out!  They also have a large selection of ice cream that is made with coconut milk instead of regular milk.  (Cohl and I LOVE this!!  No tummy aches or sneezing for us!)  And their Pad See Ew recipe is incredible!

What is Pad See Ew?

Typically, Pad See Ew is a Thai stir fry dish composed of wide, flat rice noodles, a slightly sweet soy sauce-based sauce, and Chinese broccoli.  It is normally served with pork, but chicken or any other protein may be substituted.

How to Make Pad See Ew?

As mentioned above, this pad see ew recipe starts off with a base of flat rice noodles and a sweet soy sauce.

Wanting to add a bit more color, and nutrition, I decided to throw in some carrots and bell peppers into the pad see ew recipe.

Also, instead of using the sometimes-hard-to-find Chinese broccoli, I substituted regular broccoli instead.  Feel free to use regular broccoli, broccoli rabe, or even Chinese broccoli.

Easy Pad See Ew with Chicken

A traditional Thai noodle stir fry dinner recipe that is made gluten free!

Ingredients 

  • 8 oz wide rice noodles
  • 2 cloves garlic minced
  • ½ lb chicken cut into ½ - inch cubes
  • 1 c bell pepper cut into 1- pieces
  • 1 c carrots thinly sliced
  • 1 c broccoli rabe or regular broccoli
  • 3-4 tbsp olive oil divided
  • 2 eggs scrambled

Sauce:

  • 1/3 c soy sauce gluten free
  • 2 tbsp fish sauce
  • 1 ½ tbsp rice vinegar
  • 1 ½ tbsp brown sugar
  • 2 tbsp water

Toppings:

  • Green Onions
  • Cilantro
  • Lime

Instructions 

  • Bring a large pot of water to a boil. Once it has reached a boil, remove pot from heat and place noodles into water. Soak noodles for 5-6 minutes.
  • Drain water from noodles and rinse with cold water until ready to use.
  • In a medium-sized bowl, combine soy sauce, fish sauce, vinegar, brown sugar and water. Whisk to combine.
  • In a large skillet or wok, over medium heat, drizzle 1 T. olive oil. Add garlic and saute 1 minute. Add cubed chicken and continue cooking over medium heat for 3 minutes.
  • Push chicken to the side of the skillet and drizzle another 1-2 T. olive oil. Add bell pepper, carrots and broccoli rabe. Saute for 4-5 minutes, mixing in chicken during the last 2 minutes.
  • Push all vegetables and chicken to the side of the skillet. Drizzle another 1 T. oil and add eggs. Scramble until cooked through.
  • Add cooked noodles and prepared sauce to the skillet. Cook over medium-low heat for 2-3 minutes.
  • Serve Pad See Ew with green onions, cilantro and lime juice. Enjoy!

    1. Hi Kristin! Yes, great question! I use chicken breasts for this recipe, but chicken thighs would work great, too! I’ll be sure to update the recipe to reflect this.
