Gluten Free with L.B. has transformed into Evolving Table on August 10th, 2017.

Some of you may have already heard the news in the recent Instagram and Facebook posts I published, but if you don’t know what I am talking about…

Why the Switch?
Quite simply… I am no longer following a strictly gluten-free diet.
Yes, I know. It was quite an adjustment for all of my wonderful friends and family who had learned the ins and outs of gluten-free eating, too. And to all of you… thank you so very much for your kindness and thoughtfulness for these past 4+ years!!
Instead, I have found that eating a healthy balance is what works best for me and for my body. (Read more about my journey below!)
What Will Evolving Table Look Like?
While all of the old recipes from Gluten Free with L.B. will still be on the new site, along with tons of new GF recipes that are yet to be created, Evolving Table will be more than just a gluten-free recipe site.
Evolving Table will be a place you can come to find uncomplicated healthy recipes, tips for healthy cooking, as well as resources that will give you educational information about various nutritional topics.
I am a dentist by trade, and a food blogger by passion. I am definitely not a nutritional expert!!
Evolving Table will be a place where I tell you what I am discovering through my nutritional journey as well as getting to learn from all of you lovelies about your individual journeys!
I like to envision it as a community of friends who are helping each other evolve into their healthiest, happiest selves!… With tons of yummy food and recipes, of course.

Some Cool New Features on Evolving Table
Not only will Gluten Free with L.B. be updating to Evolving Table on all platforms, but the site is actually getting a MASSIVE facelift thanks to Julie over at Deluxe Designs. Some of the cool new features include:
- Easy-to-navigate recipe index with advanced filtering.
- Labels that clearly define the dietary categories a recipe fits into.
- Nutritional info for every single recipe.
- A super clean and easy to read site!

A Little Bit About Me and My Journey to Evolve
Oftentimes I enjoyed a bowl of sugary cereal for breakfast and a PB&J sandwich for my lunch as a kid.
My parents both worked full-time so dinner mostly consisted of easy-to-prepare meals or fast food on our way to dance, volleyball, or piano practice. Even through my college years, I ate the same way… because that was what I knew about eating.
At age 24 I was suffering from stomach cramps, gassiness, constant headaches/migraines, and just overall not feeling so hot. I decided to give gluten-free eating a try.
After a few days, I was convinced that gluten was enemy #1. For over 4 ½ years I was strictly gluten-free and encouraged others that it was THE way.
I was so passionate about gluten being the “root of all evil” that I started a site some of you may know called “Gluten Free with L.B.” It worked for me for a few months, until it didn’t.
The stomach issues returned, the migraines remained, and I would still get crashing blood sugars on random mornings. I soon had to face the reality that I had avoided all along… eliminating gluten was not my quick-fix.
It was more than swapping out my gluten-filled pretzels for gluten-free pretzels. I began to realize that when I consumed too much sugar, dairy, or processed foods in one day I would feel pretty crummy.
For a long time I did not give the food, the fuel, I was putting into my body the credit (or the fault!) it deserved. Food plays a MASSIVE role in how we think, move and feel.
That old saying “You put junk in, you get junk out” couldn’t be closer to the truth.
But… you must also find a healthy balance. A level of nutritious eating you can maintain throughout eternity. A way of eating that doesn’t consume your life but is seamlessly integrated into your crazy-busy-hectic-but-oh-so-amazing way of living.
And slowly, ever-so-slowly, begin to evolve… and adopt new and better eating habits along the way.
