Looking for a kid-friendly snack?  Or perhaps an after dinner treat for yourself?  These healthy German chocolate bars just might be what you are looking for!  Loaded with nutrition, these no-bake chocolate bars are gluten-free, dairy-free, soy-free and vegan.

Perfectly sweet, and slightly salty, these healthy German chocolate bars with almond butter have already been made numerous times in our household over the past two weeks!  Can you tell I have an obsession with all things almond butter and chocolate?!

This past weekend I got to celebrate my sister’s upcoming wedding by attending a shower in our hometown of Orange, TX.  The house was decorated with bright pink hues, stripes, and polka dots.  The ladies who put it on did an incredible job of capturing my sister’s love for Kate Spade everything.

(My sister definitely is the more girly, fashion-loving one of us two!)

Since driving to Orange from Austin is a good 4-5 hour drive, I knew I would need a bit of nourishment along the way.  Luckily I had just made a batch of these healthy German chocolate bars with almond butter!

What makes these Healthy German Chocolate Bars so Good for You?

These healthy German chocolate bars are loaded with healthy oils, nuts and fiber for a filling, and very tasty treat!  So what exactly makes up these no-bake chocolate bars?

  • Almonds (almond meal) – totally a super food!
  • Pecans – loaded with good-for-you oils.
  • Coconut Oil – another excellent oil!
  • Unsweetened Coconut – tons of fiber found here.
  • Dates – slightly sweet and full of fiber, too.
  • Pure Maple Syrup – a little bit goes a long way!

How long can I store these Healthy German Chocolate Bars?

If these healthy german chocolate bars make it this long (we finish our batch off in about 2-3 days!!)… they can be stored for two weeks in the refrigerator without losing too much flavor.  Technically, the ingredients will be good for up to a month, but I have found their flavor diminishes over time.

What Equipment do I need to make these Healthy German Chocolate Bars?

There are two main kitchen items you will need in order to make these no-bake chocolate bars:

  1. Food processor – this is the food processor I have.  You will need a food processor that can hold between 9-12 cups.
  2. 8.5-inch x 5-inch loaf pan – this is my new favorite loaf pan!  I love how square the edges are 🙂

Healthy German Chocolate Bars with Almond Butter

Healthy German chocolate bars with almond butter are gluten-free, vegan, dairy-free and soy-free. They make a wonderful no-bake chocolate dessert recipe!

Ingredients 

Chocolate Layer:

  • 1 c pecans raw, pieces
  • 1 ½ c almond meal
  • 1 c oats quick-cooking, gluten-free
  • c cocoa powder regular or dark
  • c dates pitted, coarsely chopped
  • 2 ½ T coconut oil melted
  • ¼ c pure maple syrup
  • ¼ tsp salt
  • 1 tsp vanilla extract

Almond Butter Coconut Layer:

  • ½ c almond butter smooth
  • 1 c unsweetened coconut flakes finely shredded
  • 3 T maple syrup
  • 1 pinch salt
  • 2 Tbsp coconut flour

Instructions 

Chocolate Layer:

  • In the bowl of a food processor combine pecans, almond meal, oats and cocoa powder. Process for 1-2 minutes, or until mixture becomes a fine crumble.
  • Add dates and process for 30 seconds.
  • Add oil, maple syrup, salt and vanilla extract. Process for 1-2 minutes or until mixture begins to clump together.
  • In a 8 ½ by 5 inch loaf pan place a layer of wax paper. Press chocolate layer firmly into the bottom of the pan. The mixture will be slightly oily. Take a paper towel and dab away any excess oil.
  • Place pan in the refrigerator until next layer is ready.

Almond Butter Coconut Layer:

  • If coconut flakes are not finely shredded, add these first to the bowl of a food processor and process until finely shredded.
  • Combine all almond butter coconut layer ingredients in the bowl of a food processor and process for 1-2 minutes, or until mixture is a smooth, homogenous consistency.
  • Spread this layer on top of the chocolate layer, pressing the mixture firmly into the chocolate layer.
  • Top with extra shredded coconut. (Optional)
  • Refrigerate for at least one hour before serving. You can store uneaten bars in the refrigerator for up to two weeks.
