Having been out of all types of school for a little over 2 years now (grade school, college, professional school, etc.) there is still something within me that gets a little excited about the start of a new semester.  Whether it was getting to see all of my friends I had not seen over the summer, or finally cracking open that brand new, paisley-print notebook… something about the dawn of a new school year gave me a bit of excitement!

  • Decrease the amount of mini M&Ms you add.
  • OR… swap out the M&Ms for cacao nibs.
  • Use a 100% natural peanut butter with no added sugar or salt.

These healthy monster cookie bites stay great in the refrigerator for up to 2 weeks.  They taste best when they have been at room temperature for at least 5 minutes before serving.

Healthy Monster Cookie Bites

Only a few ingredients are needed to make these healthy monster cookie bites.  They are perfect for a quick snack or dessert!
Yield 20 bites
Prep 10 minutes
Total 40 minutes

Ingredients 

  • 3 cups old-fashioned oats gluten-free
  • 1 cup peanut butter* smooth and slightly runny
  • 1/2 cup pure maple syrup
  • 1/3 cup mini M&Ms
  • 1/4 tsp salt

Instructions 

  • Combine all ingredients in a large bowl and stir until well mixed.
  • Scoop 1 ½ - 2 tablespoons of mixture at a time. Press mixture between your hands multiple times to get it to stick together. Roll into a ball and place on a cookie sheet.
  • Repeat with remaining mixture.
  • Refrigerate healthy monster cookie bites for at least 30 minutes before serving.
  • Serve at room temperature and enjoy!

    My son (age 6) and I made these last night. They tasted great but I had soooo much trouble forming them into balls. It was super frustrating and my son ended up not helping with that part. The mixture just fell apart.
    Any tips? I used all natural creamy Jiff, and I did heat it to make it slightly runny.
    Otherwise, I’d give them 5 stars!

    1. Hi Andrea! So sorry to hear they were a bit challenging to roll up. A big determinant will be the type of peanut butter used (and heating in the microwave helps with that, too!) Next time, I would suggest decreasing the amount of oats used slightly if you’re using the same PB. Also, you might want to try squeezing the mixture together with your hand and then rolling them into balls. Hope this helps! Thanks for your comment and feedback 🙂

  2. anyone try these with sunflower butter, it is not watery so I’m not sure it would work. My son has life threatening dairy, egg and peanut allergies as well as an almond allergy. So I would need to sub with sunflower butter and Good Life mini morsel chocolate chips. Thanks!

    1. Hi Heather! I have not personally tried this recipe with sunflower butter, but I bet you can make it work! If it’s a little too thick just add less sunflower butter and a touch of coconut oil to make it more like the consistency of peanut butter.

    Tasty and easy to make. However M&M’s minis breaks too easily. Non of the minis survived in a piece. Would recommend to add it in later for decoration.

    1. Hi Germaine! Thanks so much for your feedback! Sorry to hear the M&Ms broke apart. Sometimes if your PB is not smooth enough the batter will be a bit too stiff. You can always try heating the peanut butter before mixing all of the ingredients together and that might help!
