Popsicle pictures have been everywhere lately.  Being a newbie to this whole popsicle scene I decided to go to good ole’ Ammy and see what I could find.  (Ammy is my term of endearment for Amazon.com  Considering the fact that I either buy movies, products or order quick deliveries with Prime Now almost daily,  I figured we are at the point in our relationship that we can call each other by pet names.)  My eyes were quickly drawn to this very retro-chic popsicle mold.  Simple, classic, and tons of great reviews.  I was sold.

Is anyone else extremely impatient?!  Not thinking that I actually had to wait for the estimated time (4 HOURS?!?), I probably checked on these puppies at least 4 times throughout their freezing process, thus slowing it down even more.  But let me tell you–it definitely takes AT LEAST 4 hours.  My advice to you — freeze them and leave the house!!  Yup, go shopping, go to work, go for a loooong workout, go anywhere but your kitchen where you will be tempted to open up that freezer drawer.  And then when you return to your house you will have a wonderful tropical treat in popsicle form to enjoy!

Non-Alcoholic Pina Colada Popsicles

This popsicle recipe is perfect for those times you are craving a tropical drink without the alcohol.  Pineapples, bananas, and coconut milk give this summer treat its great flavor!

Ingredients 

  • 1 c. pineapple frozen, slightly thawed
  • 3/4 c. banana ~1 banana frozen in pieces
  • 1 1/3 c. full-fat coconut milk
  • 1 packet stevia optional

Instructions 

  • Combine all ingredients in a high speed blender or food processor until completely smooth.
  • Pour mixture into a popsicle mold and freeze for at least 4 hours.
  • Run a little warm water over the molds to help release the popsicles. Serve immediately and enjoy!
  • **If using wooden popsicle sticks, freeze for at least 30 minutes before placing them into the molds.
