Cohl and I are known to spontaneously throw casual get-togethers.

And when I say get-togethers, I mean 15-20 of our awesome friends coming over to enjoy food on a weeknight.

We definitely have the motto, “The more the merrier!” when it comes to bringing people together.

Most recently we hosted a dinner on the first Sunday night after the time change.  (Does anyone else get CRAZY tired when it gets dark at 5:30?!)

In the past, we have served up everything from chicken and steak fajitas to this Slow Cooker Chicken Curry.  But this time… I was feeling L.A.Z.Y.  I wanted something with minimal prep and pretty much no work involved.

So what did we do?… We made ourselves a baked potato bar for dinner and served up these already prepared (but still SUPER easy to make) snickerdoodle cookie dough bites for dessert.

It was a HUGE success.  Little did I know how psyched our friends would be to eat a baked potato.  (Just goes to show you how grateful, gracious, and just plain out awesome our friends are!)

In the future, I might go through a few ways to host a dinner party with minimal fuss, but for today I’ll skip straight to the dessert… these snickerdoodle cookie dough bites.

What’s so healthy about these Snickerdoodle Cookie Dough Bites?

Not only are these Snickerdoodle Cookie Dough Bites gluten-free, vegan, dairy-free, and can easily be made refined sugar-free, but they are also made from:

  • Cashews – these nuts are loaded with protein as well as minerals such as magnesium and potassium.
  • Honey – can help counter environmental allergens and is a great source of antioxidants.
  • Oats – a wonderful source of magnesium and dietary fiber.
  • Cinnamon – a potential anti-inflammatory ingredient and is loaded with antioxidants.

How Can You Evolve these Snickerdoodle Cookie Dough Bites?

There are a couple of ways you can adapt these Snickerdoodle Cookie Dough Bites to better fit your dietary preferences:

  • Feel free to use maple syrup or agave nectar if you are vegan.
  • To make this recipe completely refined sugar-free, use coconut sugar instead of pure cane sugar.

Snickerdoodle Cookie Dough Bites

Ingredients 

For Rolling:

  • 2 Tbsp. cane sugar or coconut sugar
  • ¾ tsp. cinnamon

Snickerdoodle Bites:

  • 1 cup raw cashews soaked in water for 30 minutes
  • 1/3 cup honey or maple syrup
  • 2 Tbsp. coconut oil melted
  • 2 ¼ c. quick cooking oats gluten-free
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • ½ tsp. cinnamon

Instructions 

  • In a shallow bowl combine cane or coconut sugar and ¾ teaspoon cinnamon and toss until evenly mixed. Set aside until ready to use.
  • In the bowl of a food processor combine soaked cashews, honey, and coconut oil. Process for 2-3 minutes or until cashews become smooth.
  • Add oats, vanilla, salt, and ½ teaspoon cinnamon. Continue processing for another 1-2 minutes, scraping the sides of the bowl every 20-30 seconds to ensure even mixing.
  • Once “cookie dough” is an even consistency and begins to stick together in the bowl, roll 1 ½ - 2-tablespoons of dough into a ball. Roll ball in cinnamon sugar mixture. Repeat with remaining “cookie dough.”
  • Serve snickerdoodle bites immediately or keep in an airtight container for up to 5-7 days.

  1. I almost passed these over. Although Snickerdoodle cookies have been a favorite of mine since childhool (many, many years ago), I do not like cookie dough. Since this cookie “dough” is made from cashews (another favorite) I will be adding these to my Christmas cookie tray. Thank you London
