KEY INGREDIENTS

Mix together flour, coconut sugar, baking soda, apple pie spice, and salt.  Whisk together applesauce, maple syrup, eggs, and vanilla in a separate bowl. Add dry ingredients to wet ingredients and mix by hand.

INSTRUCTIONS

Line a muffin tray and spray liners with nonstick spray. Evenly distribute batter across all 12 cups. Whisk together cinnamon and sugar and sprinkle over the muffins.

Bake at 350°F for 22-25 minutes. Cool to room temperature before serving.
