Caprese Chicken is loaded with all the classic Italian flavors and ready in under 30 minutes! Seasoned chicken breasts are seared in balsamic vinegar reduction, then topped with mozzarella and tomatoes and baked in the oven.

Pound chicken to 1-inch and cut into four portions. Sprinkle with salt and pepper and sear in pre-heated oil 2-3 minutes on each side. Then set chicken aside.
Saute garlic, stir in balsamic vinegar, sugar, and remaining salt and pepper. Bring to a boil and simmer for 2-3 minutes, or until thickened. Place chicken back in the pot.
Place mozzarella cheese on top of each breast and pour in the cut tomatoes. Bake at 350°F for 18-20 minutes.
Top with the basil chiffonade and drizzle with additional balsamic glaze, if desired. Enjoy!
