Whisk together pickle juice, milk, and eggs. Add chicken and toss. Marinate for at least 30 minutes. Whisk together flour, breadcrumbs, powdered sugar, salt, pepper, garlic, and paprika.
Working in batches, coat chicken in breadcrumbs. Heat peanut oil in a large skillet. Shake off any extra coating from chicken nuggets and place in a single layer.
