MOLE SAUCE

Add the spices, onion & garlic to a pan then add to a blender with chipotle peppers, almond butter, raisins & cocoa powder. Simmer uncovered for 15 minutes.

ENCHILADAS

Cook tortillas until crisp then add shredded chicken, cheese & mole sauce. Add tortillas to baking tray with mole sauce & cheese. 

Bake for 20-25 minutes then serve with fresh cilantro, green onions, sour cream, salsa, or guacamole. 

TIPS & TRICKS

Homemade Mole sauce has so much more flavor than store-bought!

Use white or yellow corn tortillas for best texture.

Frying the tortillas first avoids then going soggy!
