Whisk oil, lime juice & salt. Brush over tortillas then bake until crispy.
Blend the Tinga sauce ingredients then add to a pan. Bring to the boil, simmer for 10 minutes then add the shredded chicken.
On each tostada shell layer refried beans, chicken tinga then shredded lettuce. Top with avocado, diced tomatoes and garnish with Cotija cheese.
If vegetarian, substitute the chicken for tofu. Wait to add the toppings until right before serving to ensure they are fresh and crisp. Cotija is a sharp Mexican cheese that gives this dish a wonderful pop of flavor.
