Rinse & Drain the rice. Bring a pot of water to the boil. Add oil, salt & rinsed rice. Bring to boil then simmer (covered) for 20-25 minutes.
Once cooked, turn off the heat and add oil, lime juice & chopped cilantro. Mix until just combined.
Serve immediately with a sprinkle of additional cilantro and a sprinkle of black pepper. Enjoy!
