Toss the cubed butternut squash in oil, season with salt and pepper, and roast for 20-22 minutes. Puree squash with fresh herbs until smooth.

INSTRUCTIONS

Boil pasta according to package directions, then drain and set aside. Cook the bacon until crisp and then cook the shallots and garlic in bacon grease.

Whisk in flour until it thickens and forms a paste. Add broth and milk whisking until the sauce thickens. Then stir in the cheese, pureed squash, and cooked pasta until well combined.

Pour the macaroni and cheese into a prepared baking dish and top with the cooked bacon pieces. Combine the topping ingredients and sprinkle over the top of the pasta.

Bake until the  topping begins to brown. Let sit for 5-10 minutes and then serve with additional fresh herbs.
