Crock-Pot Chicken Tortilla Soup is a super easy and healthy recipe for busy weeknights. Simply combine chicken, taco seasoning, broth, salsa, and canned corn and beans in your slow cooker before you leave for the day and come home to a Mexican dish your whole family will enjoy.
Chicken Breast | Salsa Chicken Broth | Salt Taco Seasoning Black Beans | Kernel Corn Lime Juice
Place chicken breasts at the bottom of the slow cooker. Pour the chicken broth and salsa into the slow cooker.
Add the beans, corn, seasonings, and lime juice. Cook for 6-8 hours on low. Towards the last 30 minutes shred the chicken then let it continue to cook for the last 30 minutes.
Feel free to serve the tortilla soup with tortilla chips, sour cream, cilantro, and green onions.
