Instant Pot Jambalaya is a family favorite recipe that's made faster and easier thanks to the pressure cooker! Full of chicken, andouille sausage, rice, and Cajun seasonings, it's perfect for quick weeknight dinners or Mardi Gras celebrations!

KEY INGREDIENTS

Oil Andouille Sausage Chicken Thighs Green Bell Pepper Sweet Onion Celery Cloves | Chicken Broth Long Grain White Rice Diced Tomatoes Cajun Seasoning Bay Leaves | Basil Oregano | Salt Black Pepper

Add oil to Instant Pot and set to Sauté. Add sausage and sauté until browned, then let drain on a paper towel lined plate.  Add more oil to the pot with cubed chicken and repeat sausage steps.

COOK MEAT

Add bell pepper, onion, and celery. Sauté for 2 minutes. Add garlic and continue sautéing for another minute.  Pour in broth and and deglaze the pot.  Stir in sausage, chicken, white rice, tomatoes, and seasonings. 

COMBINE

Seal pot and set to High Pressure for 5 minutes. Allow a 5 minute natural release before manually releasing the rest.  Serve with a sprinkle of fresh parsley. Enjoy!
