KEY INGREDIENTS

- Bell Pepper - Sweet Onion - Ground Beef - Salsa - Sweet Corn

- Black Beans - Eggs - Corn Tortillas - Shredded Cheese -Taco Seasoning

Add oil, onions, and peppers to a large skillet and sauté for 2-3 minutes over medium heat before adding the meat and taco seasoning.

SAUTÉ

In a medium bowl, combine salsa, corn, and black beans. In a large bowl, combine eggs, milk, salt, and pepper. Whisk together.

COMBINE

Layer half the meat mixture, tortilla quarters, half the salsa/corn mixture, and cheese. Repeat all layers except last cheese layer.  Pour egg mixture over layers and top with remaining cheese.

LAYER

Bake for 45-55 minutes.  Serve with cilantro, green onions, avocados, and extra salsa.
