To make this recipe, just bake the potatoes, scoop out some of the insides, roast again, then fill with a cheesy, bacon mixture, and toss them back in the oven. Rinse and dry the potatoes. Poke them with a fork and rub some oil into the skin. Sprinkle with salt and pepper. Place on a foil-lined baking sheet Bake for 50-60 minutes at 400F. Cook the bacon then drain and coarsely chop into bits.
Cut the potatoes lengthwise and scoop out the insides. Whisk together the butter, garlic powder, and onion powder. Brush the butter mixture over the insides of the potatoes and then sprinkle with salt.
Return to the oven for another 20 minutes, flipping over halfway through. Sprinkle the inside with cheese and bacon. Bake again until the cheese is melted. Serve with sour cream and green onions.
