KEY INGREDIENTS

Sear the seasoned chicken on both sides in olive oil until browned and almost fully cooked. Remove from pan and set aside.

INSTRUCTIONS

Saute onion and garlic in butter over medium heat for 2 minutes, or until the onion is tender. Whisk in the broth and lemon juice. Simmer until sauce has reduced.

Turn the heat to low and add the remaining butter one tablespoon at a time. Mix in salt and the drained sun-dried tomatoes.

Place chicken back in the skillet and top with goat cheese. Cover and simmer until the cheese has melted. Pour sauce over chicken and sprinkle with additional fresh basil leaves. Enjoy!
