Microwave blueberries and honey for 30-60 seconds. Mash berries until a thick sauce forms, then stir in lemon juice, vanilla, and salt. Place in the freezer for 15-20 minutes.
Cut the goat cheese into 6 pieces and stir into the blueberry sauce. Mix until JUST combined, it will be lumpy. Return to freezer for 15 minutes to firm up.
Place 2 pieces of plastic wrap onto a flat surface to form a plus sign. Place the goat cheese in the center and wrap, starting with the horizontal piece of plastic wrap. Twist both ends to seal.
