This Mexican Breakfast Casserole is so easy to prepare ahead of time and pop in the oven when you're ready to eat! Even the little ones will gobble this easy brunch recipe up!
Green Bell Pepper | Onion Ground Sausage | Ground Beef Taco Seasoning | Salsa Canned Sweet Corn | Eggs Canned Black Beans | Cheese
Sauté peppers and onions for 2-3 minutes over medium heat. Add ground sausage and beef, and crumble the meat as it cooks. Stir in taco seasoning, salt and pepper.
In a medium bowl combine salsa, corn, and black beans, stirring to combine. Whisk eggs, milk, salt and pepper together.
In a prepared 9 x 13 inch pan, layer half of the meat mixture, tortilla quarters, half of the salsa/corn mixture, and cheese. Repeat all layers except for the last cheese layer.
Pour egg mixture over the layers and top with remaining cheese. Bake for 45-55 minutes. Serve with cilantro, green onions, avocados and extra salsa.
