Caprese Chicken is made in one pot and ready in under 30 minutes! Seasoned chicken breasts are seared in a balsamic vinegar reduction,  topped with mozzarella cheese and tomatoes, then baked in the oven for an easy dinner!

KEY INGREDIENTS

Pound chicken to 1-inch and cut into four portions. Sprinkle with salt and pepper and sear in pre-heated oil 2-3 minutes on each side. Then set chicken aside.

INSTRUCTIONS

Saute garlic, stir in balsamic vinegar, sugar, and remaining salt and pepper. Bring to a boil and simmer for 2-3 minutes, or until thickened. Place chicken back in the pot.

Place mozzarella cheese on top of each breast and pour in the cut tomatoes. Bake at 350°F for 18-20 minutes.

Top with the basil chiffonade and drizzle with additional balsamic glaze, if desired. Enjoy!
