Homemade Roasted Tomato Salsa is the best quick and easy way to recreate the restaurant-style version in your kitchen. Simply roast vine-ripened or Roma tomatoes in the oven with jalapeños, onion, and garlic, then mix with cilantro and spices to create a healthy and spicy dip.

KEY INGREDIENTS

Preheat the oven to 450˚. Remove the stems and scrub the tomatoes under cool water. Cut them lengthwise. Trim the stems from the peppers and cut lengthwise. Cut the onion into quarters.

INSTRUCTIONS

Place the tomato halves, jalapenos, onion, and garlic skin side up on a baking sheet. Drizzle oil over them and rub it into their skin. Roast for 25-30 minutes or until the skins begin to brown. Pull the garlic out after 15-20 minutes.

Add the tomatoes, onion, jalapeno and garlic cloves and any oil on the baking sheet and all remaining ingredients to a food processor.  Pulse the ingredients until they reach your desired consistency.
