Irresistibly moist and tender, this Zucchini Banana Bread is the best of both worlds. Shredded zucchini and mashed banana are mixed into a spicy, nutty quick bread and baked to golden perfection.
Flour | Sugar Baking Powder | Baking Soda Cinnamon | Nutmeg Butter | Bananas Eggs | Vanilla Extract Zucchini | Pecans
Whisk the dry ingredients in a bowl to combine. Combine the melted butter, mashed bananas, eggs and vanilla in a separate bowl. Then combine the wet and dry ingredients.
Fold in the shredded zucchini and pecans until everything is well mixed. Let the mixture rest for 5 minutes and then give it another stir. Spread the batter into a prepared loaf pan.
Bake in the preheated oven for 50-60 minutes or until the top is golden brown and a toothpick when inserted in comes out clean.
Make sure bread is fully cooked. Let the bread rest until it comes to room temperature before slicing.
