Zucchini Brownies not only taste AMAZING, but they sneak in an extra serving of vegetables! Shredded zucchini is stirred into a flour, sugar, and cocoa mixture, then baked in the oven.

Combine the melted butter with the vanilla and sugars in a large bowl. Add flour, cocoa powder, baking soda, cinnamon, and salt. Mix until well combined.
Fold in the shredded zucchini and let sit for 5 minutes. Add in the remaining flour and chocolate chips, mix until well combined, and let rest for another 4-5 minutes.
Spread the brownie batter into a prepared 9×13-inch baking dish. Bake in a preheated oven for 30-35 minutes.
The edges should start to pull away from the pan and a toothpick should come out clean when inserted. Let cool to room temperature before slicing in.
