Zucchini Lasagna Roll-Ups

Using a mandoline or knife, cut zucchini lengthwise into 1/8 inch thick slices. You should have about 24 slices. Sprinkle with salt & dab to remove moisture.
In a large skillet over medium heat combine oil, crushed garlic, and onion. Saute for 2-3 minutes. Add ground turkey and cook for an additional 6-8 minutes.
Pour marinara sauce into baking dish. Then in a bowl combine mozzarella, ricotta, Parmesan, egg, Italian seasonings, salt & pepper. Add turkey mix & stir.
MIX THE FILLING
Place 1 ½ tablespoons of the turkey and cheese mixture along each zucchini slice. Roll them up, add to the baking dish and top with mozzarella. Bake for 25-30 minutes. Serve with parsley!
