Sautéed Shredded Brussels Sprouts with Leftover Ham

  • 2 Tbsp. butter or olive oil
  • ½ sweet onion finely chopped
  • 2 cloves garlic crushed
  • 1 cup cubed ham about ⅓ pound
  • 1 lb. Brussels sprouts ends trimmed and thinly sliced
  • 1 ½ Tbsp. brown sugar or coconut sugar
  • 1 tsp. Dijon mustard
  • ½ tsp. chili garlic paste or Sriracha sauce
  • ¼ tsp. black pepper to taste
  • 2 Tbsp. water optional
  • ½-¾ tsp. salt to taste*


  1. In a large saucepan or cast-iron skillet over medium heat add butter or oil, diced onion, and crushed garlic. Sauté for 3-4 minutes, or until onions begin to soften.
  2. Add cubed ham and sauté for an additional 3-4 minutes or until the ham begins to brown.
  3. In a small bowl whisk together brown sugar, mustard, chili garlic sauce, and pepper. Add sauce and Brussels sprouts to skillet and stir to combine.
  4. Sauté sprouts for 6-8 minutes, stirring occasionally, or until cooked to your desired doneness.
  5. If your Brussels sprouts are sticking to the bottom of the skillet too much, add 1-2 tablespoons of water to help loosen up the bits.
  6. Add salt to taste and serve with additional crushed black pepper.  Enjoy!
