  • 1 lb. shrimp 21/25 count, peeled, deveined
  • 1 Tbsp. olive oil
  • 10 oz. fettuccine pasta or tagliatelle, gluten-free
  • ½ cup pesto sauce prepared
  • ½ roasted cherry tomatoes recipe
  • ¼ cup pine nuts
  • ½ tsp. salt to taste
  • Parmesan cheese optional


  1. Cook pasta according to package directions.
  2. In a large skillet over medium heat add olive oil and shrimp. Cook shrimp for 2-3 minutes per side or until cooked through.
  3. Toast pine nuts at 375 degrees for 4-8 minutes, stirring occasionally, or until golden brown.
  4. Toss drained pasta with pesto sauce, roasted cherry tomatoes, and salt, to taste.
  5. Serve pasta with shrimp, a sprinkle of pine nuts, and parmesan cheese. Enjoy!
