Healthy Oatmeal Trail Mix Cookies

Oatmeal Trail Mix Cookies are gluten-free and healthy enough to eat for breakfast! These trail mix cookies are made with gluten-free oats, coconut oil, and maple syrup, making them a great vegetarian and gluten free cookie recipe.

Ingredients

  • ½ c brown rice flour
  • c tapioca starch
  • ½ tsp xanthan gum
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 Tbsp coconut oil melted
  • 4 Tbsp butter softened
  • 1 large egg
  • c maple syrup
  • 1 tsp vanilla
  • 2 c oats gluten-free, old-fashioned
  • c dried cranberries
  • c pecan pieces
  • ¼ c pumpkin seeds
  • ½ c coconut flakes unsweetened

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, place first 5 ingredients and mix to combine.
  • Add oil, butter, egg, maple syrup and vanilla and mix for 30 seconds.
  • Add in oats, ½ cup at a time, and mix for 15 seconds after each addition.
  • Hand mix in cranberries, pecans, pumpkin seeds and coconut flakes.
  • Line two baking sheets with parchment paper. Roll 1 ½ - 2 tablespoon-sized balls of dough and then flatten into a cookie shape about ¾ - 1 inch thick.
  • Place cookie dough onto the prepared sheets, evenly spaced. Bake in preheated oven for 12-14 minutes, or until edges are slightly browned.  
  • If cookies are starting to rise more than you would like, simply press each one down halfway through baking to make a more dense cookie.
