Margarita Cupcakes with Tequila-Lime Frosting

Margarita cupcakes are finished with a tequila lime buttercream frosting for the ultimate Cinco de Mayo or summer dessert. Have your drink and dessert in one delicious bite!

Ingredients

Margarita Cupcakes:

  • ½ c butter softened
  • 1 c sugar
  • 2 large eggs
  • 1 ½ c gluten-free 1-to-1 flour*
  • ½ tsp xanthan gum
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ c buttermilk
  • 1 ½ Tbsp lime zest finely chopped **
  • ¼ c Margarita mix***
  • 2 Tbsp tequila silver or reposado

Tequila-Lime Frosting:

  • 4 Tbsp butter softened
  • 2 Tbsp lime juice fresh
  • 2 Tbsp tequila silver or reposado ±
  • 4 c powdered sugar sifted
  • 1 tsp pure vanilla extract
  • 1-2 Tbsp milk or heavy whipping cream

Instructions

For the Margarita Cupcakes:

  • Preheat oven to 350 degrees and line a cupcake muffin pan with 12 cupcake liners. Spray each with non-stick cooking spray.
  • In the bowl of an electric mixer, combine butter and sugar. Mix for 1 minute on medium.
  • Add eggs and vanilla and mix on medium for another 2 minutes, or until mixture becomes fluffy.
  • In a medium-sized bowl, combine flour, powder, soda and salt. Toss to combine.
  • Alternatively add dry ingredients and buttermilk into the butter/sugar mixture, starting and ending with the dry ingredients.
  • Lastly, mix in Margarita mix and lime zest until well combined.
  • Fill each cupcake muffin liner to ¾ full and bake cupcakes for 20-23 minutes, or until a toothpick inserted in the center comes out clean.
  • Immediately upon removing the cupcakes from the oven, brush each one with tequila.
  • Let cupcakes cool completely before frosting.

For the Tequila-Lime Frosting:

  • Place butter, tequila, lime juice and 2 c. powdered sugar in the bowl of an electric mixer. Cream until incorporated.
  • Add next cup of powdered sugar, vanilla extract and cream until incorporated.
  • Add the last cup of powdered sugar and 1-2 tablespoons milk, (depending on your desired consistency) and cream until smooth.
  • Once cupcakes are completely cooled, frost with tequila-lime frosting and enjoy!

Notes

*I used Bob's Red Mill 1-to-1 Gluten-Free flour blend.
**About three limes worth of zest.
***I used Tres Agaves margarita mix.
±If you do not want to use alcohol, leave out the tequila on the cupcakes and substitute the tequila in the frosting for additional milk or heavy whipping cream.
