Slow Cooker Hawaiian Chicken Sandwiches

- 1-15 oz can coconut milk full-fat
- 1-15 oz can crushed pineapple drained, reserve ¼ cup pineapple for sauce
- 3 Tbsp soy sauce gluten-free
- ½ tsp salt to taste
- 1 tsp paprika
- ¼ tsp cayenne pepper
- 2 cloves garlic crushed
- 1 tsp Worcestershire sauce
- 2 lbs chicken breasts
- 6 sandwich buns gluten-free
- Lettuce
- Cabbage shredded
- Pineapple pieces
Pineapple Yogurt Spread
- ⅓ c Greek yogurt plain non-fat
- ¼ c reserved crushed pineapple
- 2 Tbsp unsweetened coconut finely shredded
- 1 tsp sugar
In a large blender or food processor combine coconut milk, pineapple (save ¼ cup for pineapple yogurt spread), soy sauce, salt, paprika, cayenne, garlic and Worcestershire sauce.
Blend until smooth.
In a 4-6 quart slow cooker place chicken breasts and then pour sauce over chicken. Pick up each breast to make sure some of the sauce goes underneath the chicken.
Place slow cooker on low and cook for 6-8 hours, or high for 4-6 hours.
During the last 30 minutes of cooking, shred chicken with two forks, cover and continue cooking on low for the last 30 minutes.
Pineapple Yogurt Spread:
Combine all ingredients in a medium-sized bowl and whisk to combine.
Layer hamburger buns with pineapple yogurt spread, Hawaiian chicken, lettuce, cabbage and pineapple. Serve immediately and enjoy!
