Meal Prep and Storage

    • To Prep Ahead: You can shred the chicken or make the sauce up to 1 to 2 days ahead of time.
    • To Store: It is essential that you keep the ingredients separate. If you are packing these peanut Asian chicken lettuce wraps up for lunch, do NOT assemble them beforehand. Bring your lettuce separately or store it in the same container with a paper towel between it and the chicken. Otherwise, you will end up with not-so-yummy, soggy wraps. (Yup, learned that the hard way.) Keep chicken in an airtight container in the fridge for up to 3 to 4 days.
    • To Freeze: Shredded chicken freezes beautifully for up to 4 to 5 months. The lettuce, on the other hand, should not be frozen.
