Blueberry Flax Granola Bars

These bars must have been exactly what they needed, because between the 5 men, not a single bar made it home!  Hope you enjoy!

Ingredients

  • 2 ½ c gluten free quick-cooking oats
  • 1 c pecans raw
  • ¼ c flax seeds
  • ½ c honey
  • ¼ c brown sugar
  • 2 T butter can also use coconut oil, melted
  • 2 t vanilla extract
  • ½ t salt
  • ¾ c dried blueberries

Instructions

  • Preheat oven to 300 degrees.
  • Combine all ingredients, except blueberries, in a large bowl and mix until well combined.
  • Add in blueberries and stir until thoroughly mixed.
  • Spray a 9-inch square baking dish with PAM spray, or line it with parchment paper.
  • Press granola mixture firmly into pan. If granola sticks to hands, spray slightly with PAM spray and continue to press into pan so the bars are nice and condensed. Bake for 25-30 minutes or until the top is evenly golden brown.
  • Wait until bars are completely cooled to cut. Enjoy!
