Easy Morning Hash & Eggs

- 2 slices bacon finely chopped
- 2 T butter
- ⅔ c bell pepper finely chopped
- ⅔ c sweet onion finely chopped
- 3 ½ c hash brown potatoes frozen, shredded
- 1 t salt
- ½ t pepper
- ½ t garlic powder
- ½-1 t Sriracha sauce or other hot sauce of choice
- 3 eggs
Sauté chopped bacon in a large skillet over medium heat for 3-5 minutes, or until bacon is almost crispy.
Add in butter, bell pepper and onion and continue sautéing for another 3 minutes, or until veggies become tender.
Add potatoes, salt, pepper, garlic and Sriracha sauce. Stir all ingredients and cook for 8-10 minutes to cook the potatoes.
Make three wells into the potatoes and crack the eggs into them. Cover the skillet with a lid and let the eggs cook until done to your preference (about 5-7 minutes.)
Serve with additional Sriracha sauce if desired. Enjoy!
