Cohl’s Quick Breakfast Tacos
These breakfast tacos are filled with eggs, avocado and cilantro. Yum!

- 2 T butter
- ½ c bell pepper chopped
- ½ c onion chopped
- 1 clove garlic crushed or minced
- 8 eggs
- 1 t salt
- 1 t pepper
- 1/3 c salsa
- 1/4 c milk
- 8 corn tortillas or 16 if you want to serve each taco with 2 tortillas
- 1 c shredded cheese optional
- ¼ c cilantro optional
- 1 avocado optional
Saute bell pepper and onion in butter and garlic clove for 5-7 minutes in a large saucepan over medium heat.
In a medium bowl, combine eggs, salt, pepper, salsa and milk and whisk until well combined.
Add egg mixture to saucepan and scramble over medium heat for 6-8 minutes, or until eggs are completely cooked.
Serve eggs on corn tortillas and top with cheese, cilantro and avocado to serve. Enjoy!
