Cohl’s Quick Breakfast Tacos

These breakfast tacos are filled with eggs, avocado and cilantro. Yum!

Ingredients

  • 2 T butter
  • ½ c bell pepper chopped
  • ½ c onion chopped
  • 1 clove garlic crushed or minced
  • 8 eggs
  • 1 t salt
  • 1 t pepper
  • 1/3 c salsa
  • 1/4 c milk
  • 8 corn tortillas or 16 if you want to serve each taco with 2 tortillas
  • 1 c shredded cheese optional
  • ¼ c cilantro optional
  • 1 avocado optional

Instructions

  • Saute bell pepper and onion in butter and garlic clove for 5-7 minutes in a large saucepan over medium heat.
  • In a medium bowl, combine eggs, salt, pepper, salsa and milk and whisk until well combined.
  • Add egg mixture to saucepan and scramble over medium heat for 6-8 minutes, or until eggs are completely cooked.
  • Serve eggs on corn tortillas and top with cheese, cilantro and avocado to serve. Enjoy!
