Pumpkin Chocolate Chip Muffins Recipe

These healthy Pumpkin Chocolate Chip Muffins are the best recipe for a quick breakfast or snack. It is easy to throw these treats together by mixing flour, pumpkin puree, and spices and baking them to light and fluffy perfection.

Ingredients

  • 1 ¾ cups flour gluten-free 1-to-1, if needed
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • ¾ cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 stick butter melted
  • 1 ½ tsp. vanilla extract
  • 1 cup pumpkin puree canned
  • 1 ½ cups chocolate chips semi-sweet

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, cinnamon, and sugars.
  3. In a separate large bowl whisk together the eggs, melted and cooled to room temperature butter, vanilla extract, and pumpkin puree.
  4. Add the wet ingredients to the dry and stir with a spatula until just combined. Once mixed, fold in the chocolate chips.
  5. Spray a 12-cup muffin tray with non-stick cooking spray and fill each one with the batter until almost full.
  6. Bake in the preheated oven for 20-24 minutes, or until a toothpick when inserted comes out clean.

  7. Let cool for 10 minutes before serving and enjoy!

  • To Store: These muffins will last up to 3 to 4 days on the counter or up to 1 week in an airtight container the fridge.
  • To Freeze: Allow the muffins to cool completely, then flash freeze on a baking tray for a couple of hours. Then tightly wrap them and store in a freezer-safe bag for up to 3 months.
  • To Reheat: You can pop these muffins back in a 325℉ oven for 5 to 8 minutes or place them in the microwave for a minute or two.
