Ingredients

  • 2 c. Greek yogurt
  • 1 T. lemon zest
  • 2 T. lemon juice
  • 1 t. dill fresh
  • 1 T. parsley fresh
  • 1 t. salt
  • ½ t. pepper
  • 1 ½ - 2 pounds chicken breasts or thighs bones removed and cut into 4-6 oz. portions

Instructions

To Prepare the Greek Yogurt Chicken:

  • In a large bowl combine all ingredients except for chicken. Stir until well mixed.
  • Place chicken in bowl of yogurt sauce and coat each piece completely.
  • Refrigerate chicken for 1-2 hours. Make sure not to marinade any longer or chicken will become too mushy.

To Cook the Greek Yogurt Chicken:

  • Remove each piece of chicken from the yogurt sauce. Lightly wipe off excess yogurt sauce, leaving a thin layer still on the chicken.
  • Pour 2 tablespoons of oil into a large skillet over medium heat. Place chicken into the skillet in a single layer, cover and cook for 5 minutes. Flip chicken and cook for another 5 minutes.
  • Drain any excess liquid from the skillet. Pour 1 additional tablespoon of olive oil into the skillet and sear chicken for 3-4 minutes per side, or until chicken is cooked thoroughly.
  • Serve chicken with additional lemon and a few sprinkles of fresh parsley. Enjoy!
