Lemon & Greek Yogurt Chicken
A healthy, gluten-free dinner recipe for Greek yogurt chicken that is made in a skillet and seasoned with lemon, parsley and dill.

- 2 c. Greek yogurt
- 1 T. lemon zest
- 2 T. lemon juice
- 1 t. dill fresh
- 1 T. parsley fresh
- 1 t. salt
- ½ t. pepper
- 1 ½ - 2 pounds chicken breasts or thighs bones removed and cut into 4-6 oz. portions
To Prepare the Greek Yogurt Chicken:
In a large bowl combine all ingredients except for chicken. Stir until well mixed.
Place chicken in bowl of yogurt sauce and coat each piece completely.
Refrigerate chicken for 1-2 hours. Make sure not to marinade any longer or chicken will become too mushy.
To Cook the Greek Yogurt Chicken:
Remove each piece of chicken from the yogurt sauce. Lightly wipe off excess yogurt sauce, leaving a thin layer still on the chicken.
Pour 2 tablespoons of oil into a large skillet over medium heat. Place chicken into the skillet in a single layer, cover and cook for 5 minutes. Flip chicken and cook for another 5 minutes.
Drain any excess liquid from the skillet. Pour 1 additional tablespoon of olive oil into the skillet and sear chicken for 3-4 minutes per side, or until chicken is cooked thoroughly.
Serve chicken with additional lemon and a few sprinkles of fresh parsley. Enjoy!
