Peanut Butter Cinnamon Roll Oatmeal Bites
Only one bowl and a few ingredients are needed to make this healthy breakfast or snack recipe full of peanut butter, cinnamon and gluten free oats!

- 2 c. quick oats gluten free
- ¼ c. flax seed meal
- 1 T. cinnamon
- 1/3 c. pure maple syrup
- ½ c. peanut butter all natural and liquidy (Laura Scudder’s chunky PB used)
- 2 T. coconut oil melted
- ¼ c. coconut sugar
- 1 ½ t. cinnamon
In a large bowl combine oats, flax seed meal and 1 T. cinnamon. Toss to combine.
Add maple syrup, peanut butter and coconut oil and stir with a stiff spatula. Once it is difficult to mix with a spatula, use your hands until thoroughly combined.
In a small bowl place coconut sugar and cinnamon. Toss until mixed.
Scoop out a 2 tablespoon-sized ball of mixture and squeeze it to further tighten the oatmeal mix. Shape into a ball and roll in the coconut sugar/cinnamon. Repeat with remaining mix until done.
Refrigerate for at least 30 minutes before serving. Store in refrigerator between servings.
Makes about 15 bites.
