Peanut Butter Cinnamon Roll Oatmeal Bites

Only one bowl and a few ingredients are needed to make this healthy breakfast or snack recipe full of peanut butter, cinnamon and gluten free oats!

Ingredients

  • 2 c. quick oats gluten free
  • ¼ c. flax seed meal
  • 1 T. cinnamon
  • 1/3 c. pure maple syrup
  • ½ c. peanut butter all natural and liquidy (Laura Scudder’s chunky PB used)
  • 2 T. coconut oil melted
  • ¼ c. coconut sugar
  • 1 ½ t. cinnamon

Instructions

  • In a large bowl combine oats, flax seed meal and 1 T. cinnamon. Toss to combine.
  • Add maple syrup, peanut butter and coconut oil and stir with a stiff spatula. Once it is difficult to mix with a spatula, use your hands until thoroughly combined.
  • In a small bowl place coconut sugar and cinnamon. Toss until mixed.
  • Scoop out a 2 tablespoon-sized ball of mixture and squeeze it to further tighten the oatmeal mix. Shape into a ball and roll in the coconut sugar/cinnamon. Repeat with remaining mix until done.
  • Refrigerate for at least 30 minutes before serving. Store in refrigerator between servings.
  • Makes about 15 bites.
