Healthy No-Bake Chocolate Macaroons

No-Bake Chocolate Macaroons are a healthy, gluten-free, and raw dessert made with coconut, cacao powder and naturally sweetened!

Ingredients

  • ¾ c. almonds raw
  • 3 c. coconut flakes unsweetened
  • 5 T. cacao powder
  • 4 T. wildflower honey or pure maple syrup
  • 2 T. coconut oil melted
  • ¼ t. salt
  • 1 T. coconut sugar

Chocolate Glaze

  • 2 T. coconut oil melted
  • 2 T. wildflower honey or pure maple syrup
  • 5 T. cacao powder

Instructions

  • Place almonds and coconut flakes in the bowl of a food processor. Process for 2 minutes, or until mixture becomes a fine crumble.
  • Add cacao powder and process for 15 seconds.
  • Add in maple syrup or honey, coconut oil, salt and coconut sugar and process for another 45 seconds, or until mixture forms a ball.
  • Using a 1 ½ - 2 T.-sized cookie dough scoop, fill with the macaroon mixture and pack firmly. Place scoop flat side down onto a cookie sheet and press in the scoop to make the indention. (See video here.) Remove mixture from scoop and place on a wax or parchment paper lined baking sheet.

For the Chocolate Glaze:

  • Combine coconut oil, honey and cacao powder and mix until smooth. Drizzle over macaroons and refrigerate for at least 30 minutes before serving. Enjoy!
