Apple Pie Crumb Bars

 What better dessert to welcome in Fall than some Apple Pie Crumb Bars?!

Ingredients

Crumb Base & Topping

  • 2/3 c. honey
  • ¾ c. butter softened
  • 1 egg
  • 1 ¾ c. brown rice flour
  • ¾ c. tapioca starch
  • ¾ t. xanthan gum
  • 1 t. baking powder
  • ¼ t. salt
  • 1 c. old-fashioned rolled oats gluten-free

Apple Pie Filling

  • 5 c. apples about 2.5 pounds, peeled, cored and chopped into ½-inch cubes
  • 1/3 c. maple syrup
  • 3 T. butter
  • 2 T. lemon juice
  • ¼ c. tapioca starch
  • 1 t. cinnamon

Instructions

For the Crumb Base & Topping:

  • Preheat oven to 350 degrees.
  • Place honey and butter in the bowl of an electric mixer. Beat until incorporated.
  • Add egg and mix for another 30 seconds.
  • In a separate, medium-sized, bowl combine the remaining crumb base ingredients. Slowly incorporate the dry ingredients into the mixing bowl. (The mixture will be slightly thick and crumbly.)
  • Spray a 9 x 13 inch pan with non-stick cooking spray and press 2/3 of the crumb base mixture into the bottom of the pan. Reserve the remaining 1/3 for the topping.

For the Apple Pie Filling:

  • Melt butter in a medium saucepan over medium heat. Add apples and maple syrup and cook for 5-7 minutes, or until apples become soft.
  • Add lemon juice, tapioca starch and cinnamon. Continue cooking over medium for 3 minutes.
  • Pour apple pie filling over the crumb base. Top filling with reserved 1/3 crumb topping.
  • Bake for 35-40 minutes or until edges become golden.
  • Let sit for at least 10 minutes before serving. Enjoy!
