Apple Pie Crumb Bars

Crumb Base & Topping
- 2/3 c. honey
- ¾ c. butter softened
- 1 egg
- 1 ¾ c. brown rice flour
- ¾ c. tapioca starch
- ¾ t. xanthan gum
- 1 t. baking powder
- ¼ t. salt
- 1 c. old-fashioned rolled oats gluten-free
Apple Pie Filling
- 5 c. apples about 2.5 pounds, peeled, cored and chopped into ½-inch cubes
- 1/3 c. maple syrup
- 3 T. butter
- 2 T. lemon juice
- ¼ c. tapioca starch
- 1 t. cinnamon
For the Crumb Base & Topping:
Preheat oven to 350 degrees.
Place honey and butter in the bowl of an electric mixer. Beat until incorporated.
Add egg and mix for another 30 seconds.
In a separate, medium-sized, bowl combine the remaining crumb base ingredients. Slowly incorporate the dry ingredients into the mixing bowl. (The mixture will be slightly thick and crumbly.)
Spray a 9 x 13 inch pan with non-stick cooking spray and press 2/3 of the crumb base mixture into the bottom of the pan. Reserve the remaining 1/3 for the topping.
For the Apple Pie Filling:
Melt butter in a medium saucepan over medium heat. Add apples and maple syrup and cook for 5-7 minutes, or until apples become soft.
Add lemon juice, tapioca starch and cinnamon. Continue cooking over medium for 3 minutes.
Pour apple pie filling over the crumb base. Top filling with reserved 1/3 crumb topping.
Bake for 35-40 minutes or until edges become golden.
Let sit for at least 10 minutes before serving. Enjoy!
