Nutty Oatmeal Quinoa Granola Bars

These granola bars are the perfect hiking and camping food as well as a great take-along snack for any long car ride.

Ingredients

  • 2 c. oats old fashioned, gluten free
  • ½ c. uncooked quinoa
  • ½ c. pecans chopped coarsely
  • ½ c. almonds chopped coarsely
  • ½ c. coconut shredded, unsweetened
  • ¾ c. chocolate chips divided

Peanut Butter Sauce

  • ¾ c. peanut butter smooth
  • 2 T. coconut oil
  • 1/3 c. honey
  • ½ t. salt
  • ½ t. vanilla

Instructions

  • Preheat oven to 350 degrees.
  • Place oats, quinoa, pecans and almonds on a baking sheet and roast for 5-7 minutes. Remove from oven and place in a large glass bowl with coconut. Toss to combine. Allow to cool to room temperature.
  • Combine peanut butter, coconut oil and honey in a medium saucepan over medium heat and bring to a boil. Continue boiling for 1 minute. Remove from heat and stir in salt and vanilla.
  • Pour peanut butter sauce over oat mixture. Stir to coat oat mixture thoroughly. Add in ½ c. chocolate chips and stir quickly to incorporate. (Don’t stir too much otherwise chips will melt completely)
  • Press granola mixture into a non-stick cooking sprayed 8x8 inch dish. Bake for 10-12 minutes or until edges begin to brown.
  • Remove from oven and allow to cool for about 1 hour before slicing into bars. Enjoy!
