Yosemite Backpackers' Hailstorm Granola
This granola is the perfect snack to bring along with you on a hike.

- 1/3 c. PB
- 1/3 c. coconut oil
- 1/3 c. honey
- 3 c. rolled oats
- 1 ¼ c. chopped pecans
- 1 ¼ c. shredded coconut unsweetened
- ½ t. cinnamon
- ½ t. vanilla
- 1 t. salt
- 1 c. dried cranberries optional
- 1 c. dark chocolate chips optional
Melt peanut butter, coconut oil and honey in a saucepan over low heat until completely combined.
Combine oats, pecans, coconut, cinnamon, vanilla and salt in a separate bowl and pour peanut butter mixture on top. Combine until thoroughly mixed.
Spread on a parchment or aluminum foil lined baking sheet.
Bake at 325 for 30 minutes. Stir halfway through.
If you don’t mind making the granola a little sweeter, wait until it has cooled completely and mix in dried cranberries and dark chocolate chips.
