Yosemite Backpackers' Hailstorm Granola

This granola is the perfect snack to bring along with you on a hike.

Ingredients

  • 1/3 c. PB
  • 1/3 c. coconut oil
  • 1/3 c. honey
  • 3 c. rolled oats
  • 1 ¼ c. chopped pecans
  • 1 ¼ c. shredded coconut unsweetened
  • ½ t. cinnamon
  • ½ t. vanilla
  • 1 t. salt
  • 1 c. dried cranberries optional
  • 1 c. dark chocolate chips optional

Instructions

  • Melt peanut butter, coconut oil and honey in a saucepan over low heat until completely combined.
  • Combine oats, pecans, coconut, cinnamon, vanilla and salt in a separate bowl and pour peanut butter mixture on top. Combine until thoroughly mixed.
  • Spread on a parchment or aluminum foil lined baking sheet.
  • Bake at 325 for 30 minutes. Stir halfway through.
  • If you don’t mind making the granola a little sweeter, wait until it has cooled completely and mix in dried cranberries and dark chocolate chips.
  • Enjoy!
