Blueberry Muffins–Without the Refined Sugar

Enjoy these delicious blueberry muffins without the refined sugar!

Ingredients

  • ½ c. white rice flour
  • 1/3 c. tapioca starch
  • ½ t. xanthan gum
  • Or ¾ c. plus 1 T. all purpose flour instead of the above 3 ingredients
  • 1/3 c. quick-cooking oats
  • 1 egg
  • ¼ c. greek yogurt
  • 1/3 c. honey
  • 2 T. butter
  • 1 t. baking powder
  • ¼ t. salt
  • ¼ t. almond extract
  • ¾ c. frozen blueberries make sure they are completely dried

For the streusel topping:

  • 1 T. honey
  • ¼ c. quick rolled oats
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees
  • Combine all ingredients, except streusel topping and blueberries, in a bowl until just combined. Fold in blueberries last.
  • In a separate bowl, combine honey, oats and salt.
  • Line 6 places in a muffin tray with liners and spritz with PAM. Spoon equal amounts of batter in 6 liners. Sprinkle each muffin with streusel topping.
  • Bake for 25-28 minutes, or until tops are slightly golden brown.
  • Enjoy!
