Blueberry Muffins–Without the Refined Sugar

- ½ c. white rice flour
- 1/3 c. tapioca starch
- ½ t. xanthan gum
- Or ¾ c. plus 1 T. all purpose flour instead of the above 3 ingredients
- 1/3 c. quick-cooking oats
- 1 egg
- ¼ c. greek yogurt
- 1/3 c. honey
- 2 T. butter
- 1 t. baking powder
- ¼ t. salt
- ¼ t. almond extract
- ¾ c. frozen blueberries make sure they are completely dried
For the streusel topping:
- 1 T. honey
- ¼ c. quick rolled oats
- Pinch of salt
Preheat oven to 350 degrees
Combine all ingredients, except streusel topping and blueberries, in a bowl until just combined. Fold in blueberries last.
In a separate bowl, combine honey, oats and salt.
Line 6 places in a muffin tray with liners and spritz with PAM. Spoon equal amounts of batter in 6 liners. Sprinkle each muffin with streusel topping.
Bake for 25-28 minutes, or until tops are slightly golden brown.
