Blend butter and shortening with sugars.

Sift flours with xanthan gum, salt, baking powder, and pudding mix.

Slowly mix in dry ingredients into butter/sugar mixture.

Add in 2 eggs and vanilla.

Grease a round or rectangular pizza pan and spread batter into it evenly.

Bake cookie layer at 375 for 22-26 minutes, or until edges turn golden brown.

While cookie is baking, beat cream cheese with powdered sugar, pineapple preserves and honey until a smooth consistency is reached.

Wait for cookie to cool after removing from the oven and spread topping onto it.

Decorate with fruit of your choice! (Strawberries, bananas, kiwi, blueberries, raspberries and blackberries work best. You can toss the bananas in 1 t. of lemon juice if the pizza will be exposed to the air for more than 4 hours in order to prevent browning.)
