Ingredients

  • 1 cauliflower pizza crust recipe
  • 1 cup broccoli florets cut into bite-sized pieces
  • ½ cup onion cut into 1-inch slices
  • ½ cup green bell pepper cut into 1-inch slices
  • ½ cup mushrooms cut into bite-sized pieces
  • 2 Tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 4 oz. fresh mozzarella
  • 3 Tbsp. pesto
  • 1 cup arugula
  • 1 cup microgreens
  • Parmesan cheese

Instructions

  • Preheat oven to 400 degrees.
  • In a gallon-sized Ziploc bag add broccoli, bell pepper, onion, mushrooms, oil, salt, and pepper. Toss vegetables until completely coated.
  • Add vegetables to a parchment paper-lined baking sheet.
  • Bake in preheated oven for 15 minutes.
  • On a cooked cauliflower pizza crust layer pesto, mozzarella, and roasted vegetables. Return pizza to oven for 5-7 minutes, or until cheese is melted.
  • Just before serving add arugula, microgreens, and Parmesan cheese, if desired. Enjoy!
