Cilantro Lime Sweet Potato Noodles

Learn how to make cilantro lime sweet potato noodles with a spiralizer in under 15 minutes!  These sweet potato spiral noodles are an easy, healthy, gluten-free, vegan, Paleo, and whole30 side dish that is a breeze to whip up!

Ingredients

  • 1 lb. sweet potatoes peeled, spiralized (spaghetti cut)
  • 2 Tbsp. butter or olive oil
  • 1 Tbsp. olive oil
  • 1 clove garlic
  • ½ tsp. salt
  • ½ lime juiced
  • ¼ cup cilantro finely chopped

Instructions

  • Using a tabletop spiralizer*, cut sweet potatoes into noodles using the spaghetti-style blade.
  • In a large, non-stick skillet over medium-low heat combine butter, oil, and garlic. Sauté for 1-2 minutes or until garlic begins to slightly brown.
  • Add sweet potato noodles and salt. Continue sautéing for 3-5 minutes or until noodles are done to your liking.
  • Remove sweet potato noodles from heat and add salt, lime juice, and cilantro.
  • Serve immediately and enjoy!

Notes

*A tabletop spiralizer with a suction-grip is my recommendation... especially when it comes to making sweet potato noodles!
