Honey Roasted Carrots Recipe with Herbs

Honey roasted carrots are tossed in a sweet honey and herb sauce for a quick and easy side dish recipe.  Learn how to make roasted carrots with only a few simple ingredients.

  • 2 lbs. carrots peeled and cut into ¼-inch x 3-inch long pieces
  • 2 Tbsp. olive oil
  • 2 Tbsp. honey*
  • ½ tsp. rosemary fresh, finely chopped
  • ½ tsp. thyme fresh, finely chopped
  • ½ tsp. salt to taste
  • Parsley optional


  1. Preheat oven to 400 degrees.
  2. Combine oil, honey, herbs, and salt in a medium bowl. Whisk to combine.
  3. Place carrots in a large bowl and add honey-herb sauce. Toss until well combined.
  4. Line a large baking sheet with parchment paper or aluminum foil. Spread carrots out evenly on sheet.

  5. Bake in preheated oven for 24-28 minutes. Top with fresh parsley and enjoy!

*Use maple syrup or agave nectar to make this recipe vegan.
