Herb Roasted Carrots Recipe

Fresh herbs and a touch of honey come together perfectly in this easy Herb Roasted Carrots recipe. You don't have to choose sweet or savory with this easy side dish.

Ingredients

  • 2 lbs. carrots peeled and cut into ¼-inch x 3-inch long pieces
  • 2 Tbsp. oil olive or avocado
  • 2 Tbsp. honey*
  • ½ tsp. rosemary fresh, finely chopped
  • ½ tsp. thyme fresh, finely chopped
  • ½ tsp. salt to taste
  • Parsley optional

Instructions

  • Season the Carrots: Preheat oven to 400°F. Combine oil, honey, herbs, and salt in a medium bowl. Whisk to combine. Place carrots in a large bowl and add honey-herb sauce. Toss until well combined.
    2 lbs. carrots, 2 Tbsp. oil, 2 Tbsp. honey*, ½ tsp. rosemary, ½ tsp. thyme, ½ tsp. salt
  • Roast in the Oven: Line a large baking sheet with parchment paper or aluminum foil. Spread carrots out evenly on sheet. Bake in preheated oven for 24-28 minutes. Top with fresh parsley and enjoy!

Notes

  • Use maple syrup or agave nectar to make this recipe vegan.
  • Feel free to substitute with ¼ teaspoon dried herbs instead of the fresh.
  • If using whole carrots, cook them at 400 degrees for 40-50 minutes.
Prep-Ahead Instructions:
Feel free to slice the carrots a day or two early, simply leave them in the fridge until you're ready to cook. 
Storage Directions:
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Or, freeze these carrots in a freezer-safe container for up to 3 to 6 months. You can warm these back up in the oven, a skillet, or in the microwave.
Recipe Tips
  • Choose whole. Avoid using the bag of baby carrots as these have less flavor. The best carrots to use are whole.
  • Pay attention. Your cook time will vary depending on whether you're using whole or sliced carrots.
  • You pick. Peeling carrots is optional but it does give them a better texture.
  • Make it work. Change up the flavors by using a different sweetener or experimenting with other herbs and spices.
