Easy Red Enchilada Sauce Recipe

Red Enchilada Sauce is a delicious and simple recipe that is simple to make and comes together in under 20 minutes. Quickly whip up a batch with simple easy-to-find ingredients like broth, tomato paste, and Mexican spices. You can even double the batch and save half for later.

Ingredients

  • 3 Tbsp. oil olive, avocado, or vegetable
  • 3 Tbsp. flour gluten-free 1-to-1 blend
  • 1 ½ Tbsp. chili powder mild
  • 2 tsp. ground cumin
  • ½ tsp. garlic powder
  • ¼ tsp. paprika
  • ¼ tsp. oregano dried
  • Pinch of nutmeg optional
  • ½ - 1 tsp. salt to taste
  • ¼ tsp. black pepper
  • 2 Tbsp. tomato paste
  • 2 cups chicken broth regular sodium

Instructions

  • Whisk together chili powder, cumin, garlic powder, paprika, oregano, nutmeg, salt, and pepper in a small bowl.
  • Combine oil, flour, and seasoning ingredients in a medium-sized saucepan or pot over medium heat. Whisk ingredients for 2 minutes.
  • Add tomato paste and ½ cup of chicken broth. Whisk until smooth.
  • Pour in remaining 1 ½ cups of chicken broth over the course of 5 minutes, whisking until smooth between each addition.
  • Reduce heat to medium-low and simmer sauce for 8-10 minutes, whisking every 1-2 minutes to prevent burning.
  • Use enchilada sauce in your favorite Chicken and Cheese Enchilada recipe.
  • Store sauce in an airtight container in the refrigerator for up to 1 week.
  • This recipe yields ~1 ½ cups of red enchilada sauce.

Meal Prep and Storage

  • To Prep-Ahead: If you'd like to make your own homemade enchiladas, it's helpful if you prepare the sauce ahead of time so you don't have too much to do in one sitting.
  • To Store: Add sauce to an airtight container or mason jar and store in the refrigerator for up to 5-7 days.
  • To Freeze:  Enchilada sauce also freezes extremely well in a freezer-safe container for up to 3-4 months.
  • The Reheat: Cook sauce in a pan or skillet over medium heat until warmed through.
