Ingredients
One batch arepas

tbsp
olive oil
1
clove
garlic
crushed
1
c
onions
finely chopped
1
c
bell pepper
finely chopped

tsp
salt
½
tsp
pepper

tsp
Sriracha
or other hot sauce *
3 ½

shredded chicken
cooked

c
refried black beans
1-2
large avocados
cut into cubes
Queso Fresco
Cilantro
Instructions
Prepare
one batch of arepas
.
In a medium saucepan over medium heat add olive oil, garlic, onions and bell pepper.
Saute for 5-7 minutes, stirring occasionally.
Add salt, pepper, Sriracha and shredded chicken. Cook until chicken is heated through.
Fill each arepa with 2 tablespoons refried beans and ~½ cup of the chicken mixture. Repeat with remaining arepas.
Serve stuffed arepas with avocado, queso fresco and cilantro. Enjoy!
Notes
*Sriracha, or hot sauce, is optional.
