Crockpot Hawaiian Chicken

Chicken Mixture
- 2 lbs. chicken cubed
- 1/3 c. cornstarch
- ¾ t. salt
- ½ t. pepper
- ¼ c. olive oil
Sauce Mixture
- 2/3 c. brown sugar
- 1 c. pineapple juice
- 1/3 c. soy sauce gluten free
- ½ c. pineapple crushed
Combine cornstarch, salt and pepper in a gallon-size Ziploc bag. Add chicken cubes and toss until completely coated.
Sear chicken in olive oil over medium heat for about 7 minutes, turning occasionally.
Combine Sauce mixture ingredients in a small bowl. Mix well.
Place half of the sauce mixture, then cooked chicken, and then the remaining sauce mixture ingredients in slow cooker on Lo for 4-6 hours.
This meal is great served with rice or quinoa.
