Crockpot Hawaiian Chicken

This gluten free crockpot Hawaiian chicken recipe is full of flavor and super easy to prepare.  Let the slow cooker do all of the work for you and come home to an easy gluten free dinner!

Ingredients

Chicken Mixture

  • 2 lbs. chicken cubed
  • 1/3 c. cornstarch
  • ¾ t. salt
  • ½ t. pepper
  • ¼ c. olive oil

Sauce Mixture

  • 2/3 c. brown sugar
  • 1 c. pineapple juice
  • 1/3 c. soy sauce gluten free
  • ½ c. pineapple crushed

Instructions

  • Combine cornstarch, salt and pepper in a gallon-size Ziploc bag. Add chicken cubes and toss until completely coated.
  • Sear chicken in olive oil over medium heat for about 7 minutes, turning occasionally.
  • Combine Sauce mixture ingredients in a small bowl. Mix well.
  • Place half of the sauce mixture, then cooked chicken, and then the remaining sauce mixture ingredients in slow cooker on Lo for 4-6 hours.
  • This meal is great served with rice or quinoa.
