Dairy-Free Vegan Spinach Artichoke Dip

Ingredients

  • 1 Tbsp. olive oil
  • ½ cup onions finely chopped
  • 2 cloves garlic crushed
  • 3 Tbsp. tapioca starch
  • 1 ¼ cup almond milk
  • 3 Tbsp. nutritional yeast
  • 1 tsp. onion powder
  • ¾ tsp. salt
  • 1/8 tsp. pepper
  • ¾ cup vegan Mozzarella cheese
  • 3 cups baby spinach leaves thinly sliced
  • 14 oz. can artichoke hearts drained, finely sliced
  • 4 oz. pimientos drained, finely chopped

Instructions

  • In a medium-sized pot or Dutch oven drizzle olive oil and add onion and garlic. Saute over medium heat for 3-4 minutes, or until onions become translucent.
  • Reduce heat to medium-low and add starch. Whisk until incorporated.
  • Add milk, ¼ cup at a time, and whisk until dip begins to thicken before adding more milk.
  • In a separate bowl combine yeast, onion powder, salt and pepper. Whisk until thoroughly mixed.
  • Add seasonings and vegan cheese into pot and mix to combine.
  • Next, add thinly sliced spinach and stir until spinach begins to wilt, about 3-4 minutes.
  • Lastly, add sliced artichoke hearts and pimientos. Stir until well combined.
  • Serve warm with tortilla chips and enjoy!

Notes

*If dip is too thick, add more milk. If dip is too runny, continue cooking over heat to thicken it up. **Dip will thicken as it cools.
